Low Carb Chicken Cordon Bleu Casserole

Ingredients:

2.5 pounds chicken breast tenders

1/2 cup chicken broth

6 oz ham cut into bite size pieces

6 oz butter, melted

8 oz cream cheese softened (Lactose free available at No Frills or Superstore)

1 Tbsp dijon mustard

1 Tbsp lemon juice

1/2 tsp salt

5 oz swiss cheese (or Havarti or cheese of your choice)

Directions:

1. Preheat the oven nto 350 deg F.

2. Put the chicken in the bottom of a 9×13 baking dish and cook for 20 mins. Drain off any liquid and then pour the chicken broth over the chicken. Layer the pieces of ham on top of the chicken.

3. In a large bowl with an electric mixer combine the melted butter, cream cheese, mustard, lemon juice and melted butter. Blend until a thick sauce forms. Spread this sauce over the chicken and ham in the baking dish. 

4. Lay the slices of swiss cheese on top of the sauce.

5. Bake 30-40 minutes until hot.

Crab Tortilla Wraps Recipe

Crab Tortilla Wraps 

1 8oz block softened cream cheese
chopped canned Jalapenos (about 2-3 depending on how hot you like it!)
1 tablespoon sour cream
1 tablespoon mayonaise
2 tablespoons chopped green onion
1 teaspoon lemon juice
1 can crab meat, drained
1 cup grated cheddar cheese
3 tortilla wraps

Combine with a hand held blender & spread on 3 wraps. Fold the wraps into rolls and wrap in cellophane. Refrigerate 1-2 hours.  Slice 1.5″ thick.

Bake at 350 degrees for 15 mins and then broil just to brown.

Coconut oil & Maple Granola

Ingredients:
4 cups old fashioned rolled oats
1 cup hulled raw pumpkin seeds
1 ½ cup raw pecans left whole or coarsely chopped
1 ½ cup unsweetened coconut
1 cup sliced almonds
4 tbsp chia seeds (or as much as you want)
1 pinch salt, to taste
½ cup coconut oil, melted
½ cup pure maple syrup

Directions:
1. Heat oven to 300 deg F

2. Place oats, pumpkin seeds, coconut, pecans, chia seeds & salt in a large bowl.

3. Melt the coconut oil

4. Mix the coconut oil and maple syrup into the dry ingredients until well combined.

5. Spread granola mixture in an even layer on a large cookie sheet.

6. Transfer to oven and bake, stirring every 10-15 minutes until granola is fully toasted and moisture has absorbed, about 45 minutes.

7. Remove granola from oven and season with more salt if desired.  Let cool completely before serving or storing in an airtight container for up to 1 month.  Enjoy!

Crazy Easy Crockpot Curry

Ingredients

  • 2.5 pounds chicken tenderloins or boneless, skinless breasts
  • 2 bell peppers cut into strips
  • 1 large onion, diced
  • 2 cans full fat coconut milk (15 oz)
  • 2 cans tomato paste (6 oz)
  • 1 rounded tablespoon curry powder
  • 1 teaspoon garam marsala
  • 2 teaspoons mineral salt
  • 1 teaspoon red pepper flakes
  • 4 garlic cloves, minced
  • 2 cups of frozen cauliflower rice (optional)

Instructions

1. Place all ingredients (except the cauliflower) in the crockpot and stir. Cover and cook on low for 5-6 hours.  If adding cauliflower, add it in the last hour.  

2. If using chicken breasts, break it up a little as it cooks. Taste & adjust the seasonings to your family’s taste – if you don’t love heat then pull back on the red pepper flakes.  

3. Serve over rice.  (I often double the recipe so that we have leftovers)
